How it knows you are open
The button checks the time in your time zone, not the visitor's. A visitor in London looking at a shop in Mumbai sees the shop's real status. It checks again every minute while the page is open.
Hours that end after midnight work too: set Friday from 18:00 to 02:00 and the button stays open into Saturday morning.
When you are closed, the button can show a different line, like "Closed now, we reply in the morning", or hide completely. People who still message you will see your reply when you are back.
